Ingredients:
4 cups of arugula (or spinach)
1 cup chickpeas (garbanzo beans)
1 fall apple, sliced
1 large sweet potato peeled, diced and roasted
1/2 cup dried cranberries
1/2 cup pecans
1 cup of quinoa or brown rice cooked
1/3 cup of goat cheese
Maple Spice Tahini Dressing
1/2 cup of tahini
4 tbsp maple syrup (adjust to taste)
2 tbsp apple cider vinegar
1/4 tsp ground cinnamon
A dash of any other autumn spices you wish such as cayenne, pumpkin spice
3 tbsp water (add slowly and stir, amount as needed for desired thickness)
Directions:
It can be assembled
ahead of time, just add the dressing before serving. This
